By 7:00 AM this morning, all 330 remaining ostriches were dead—killed by professional marksmen using firearms in a hay-bale enclosure under floodlights.
Each bird had been individually named; many were over 35 years old.
The cull followed the Supreme Court of Canada’s dismissal of the owners’ final appeal at 3:15 PM yesterday.
The legal battle began with a CFIA Notice to Dispose issued on December 31, 2024, after H5N1 avian influenza was confirmed in two deceased ostriches.
A total of 69 birds died naturally during the outbreak, which began in December 2024.
The remaining 330+ ostriches had shown no clinical signs of illness for over 200 days and tested negative in multiple follow-up samples, indicating natural immunity according to veterinary reports submitted in court.
Universal Ostrich Farms, operated by Dave Bilinski and Karen Espersen for over 30 years, was the foundation of Struthio BioScience Inc.
The company developed a patented process to extract immunoglobulin Y (IgY) antibodies from ostrich egg yolks. Peer-reviewed research from collaborators in Japan and Boston demonstrated these antibodies neutralize H5N1, influenza A, and SARS-CoV-2 in vitro.
The flock represented a unique genetic lineage with documented viral resilience—now permanently lost.
Karen Espersen stated: “They brought war to our farm last night to kill healthy animals. They killed all my babies.”
Her daughter, Katie Pasitney, said: “They will pay for everything they’ve done. The world needs to know the monsters they are.”
